A family favorite in our house, this beef and beans recipe is so simple and yet so delicious. It makes lots of food, so we eat it for leftovers all week! Perfect for busy weeknights or when you need a hearty meal to keep everyone satisfied, this dish is a go-to for comfort and convenience.
Ingredients

1 Grand View Beef Sirloin Tip Roast, remove string and cut into large chunks
- 1 pound dry pinto beans

3 slices thick-cut bacon OR 1 Tbsp tallow
- 7 cups water
- 1/2 onion, chopped
- 3 cloves garlic, minced
- 1 Tbsp kosher salt
- 2 Tbsp chili powder
- 1 Tbsp cumin
- 1 Tbsp oregano
- 3 jalapeño peppers, seeded and chopped (substitute serrano peppers for more spice)
Optional Toppings:
- small corn tortillas or tortilla chips
- Cotija cheese
- tomatoes
- cilantro
- avocado
- lime
Directions
Dice bacon and sauté with onions in a Dutch oven.
Add remaining ingredients and bring to a boil.
Reduce heat, cover, and cook on low heat for about 4 hours.
Remove the meat from Dutch oven and break up with forks or tongs. Return meat to Dutch oven and mix into liquid.
Serve over tortillas or with tortilla chips and desired toppings.
