This quick weeknight dinner is always in our rotation and the kids get excited when they know it's on the menu. It's simple, customizable, and uses ingredients you probably already have on hand. Swap or add to the toppings to make it your own! It's also easy to double this recipe to feed more people!
Ingredients

1 lb Grand View Grass Fed Ground Beef

1 head romaine lettuce, shredded

3 tomatoes, diced

6 pickle spears, diced (we love Grillo's)

Salt & Pepper, to taste

Optional toppings: shredded cheese, avocado, fried egg, etc. (anything you'd put on a burger!)
FOR THE SAUCE
-
1/2 cup mayonnaise
-
2 Tbsp ketchup
-
1 tsp Dijon mustard
-
1 tsp Worcestershire sauce
-
1/2 tsp paprika
-
1 garlic clove, minced
FOR THE FRIES (see note for a shortcut)

4 large russet potatoes, peeled

3 Tbsp Grand View Grass Fed Beef Tallow

Salt & pepper, to taste
Directions
FOR THE FRIES
Cut potatoes into ¼-inch thick sticks. Place in a bowl, cover with cold water, and soak for 30-60 minutes to remove excess starch.
Preheat oven to 450°F. Place the tallow on a rimmed baking sheet and put it in the oven to melt.
Drain the potatoes and thoroughly pat dry (this step is crucial for crispy fries).
Once the tallow is melted, carefully spread potatoes in a single layer on the hot baking sheet. Season with salt and pepper or desired fry seasoning.
Bake 10-15 minutes, flip, then bake another 10-15 minutes, or until golden and crispy
FOR THE BURGER BOWLS
Heat a cast-iron skillet over high heat. Add the ground beef, breaking it into fork-sized chunks as it cooks (you don't want to break it up too much). Season with salt and pepper.
In a small bowl, whisk together all sauce ingredients until smooth.
Assemble bowls: layer shredded lettuce, tomatoes, pickles, ground beef, and fries. Drizzle with sauce and finish with any optional toppings.
Recipe Note
Shortcut for fries: use frozen fries or tater tots and cook according to package directions if you don't have time to make your own fries
