Grand View Beef Chili

Ingredients

  • 2 Tbsp Grand View Beef Tallow or cooking oil

  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 6 cloves garlic, minced
  • 1/4 cup chili powder
  • 1 Tbsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp red pepper flakes
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper
  • 2 pounds Grand View Grass Fed Ground Beef (or Ancestral Blend)

  • 2 (15 oz) cans red kidney beans, drained and rinsed
  • 1 (28 oz) can diced tomatoes, with juice
  • 1 (28 oz) can tomato puree
  • 1/2 tsp salt
  • 2 limes, cut into wedges
  • desired toppings for serving (cheese, sour cream, etc.)

Directions

  1. Heat tallow or oil in large, Dutch oven over medium heat until shimmering. Add onion, bell pepper, garlic, chili powder, cumin, coriander, pepper flakes, oregano, and cayenne; cook, stirring occasionally until the veggies are soft and beginning to brown (about 10 minutes).

  2. Increase heat to medium-high and add 1 pound of ground beef; cook, breaking up pieces with a wooden spoon until no longer pink and just beginning to brown. Add remaining 1 pound of ground beef and cook until no longer pink.

  3. Add beans, tomatoes, tomato puree, and ½ tsp salt; bring to a boil, then reduce heat to low and simmer, covered, stirring occasionally for 1 hour.

  4. Remove cover and continue to simmer 1 hour longer, until the beef is tender and chili is dark, rich, and thickened (if it's sticking to the pot you can add some water as you simmer).

  5. Serve with lime wedges and condiments if desired.
