Homemade Peach Salsa

This refreshing peach salsa is an excellent addition to our beef barbacoa, beef and beans, tacos, nachos, and more.
Ingredients
- 2 medium shallots, diced (about 1/2 cup)
- juice of one lime (about 2 Tbsp)
- juice of one lemon (about 3 Tbsp)
- 2 ripe peaches, diced
- 2 ripe tomatoes, diced
- 1/3 cup cilantro and stems, finely chopped
- 1 Tbsp hot honey (or sub regular honey for less spice)
- 1 small jalapeno, diced
- 1 tsp kosher salt
Directions
Start by dicing the shallots. Juice both the lemon and the lime and mix the juice with the diced shallots and set aside (this will allow the shallot to macerate - soften the texture and flavor).
Dice and combine the remaining ingredients, and then add in the macerated shallots.
