Mediterranean Meatball Bowls

Ingredients

    • 1 pound Grand View Grass Fed Ground Beef

    • 2 eggs
    • 1/2 cup red onion, minced
    • 2 tsp fresh garlic, minced
    • 2 Tbsp fresh mint, minced
    • 2 tsp cilantro (or parsley), minced
    • zest of 1/2 a lemon (save the rest for the dressing)
    • 1 tsp garlic powder
    • 2 tsp onion powder
    • 2 tsp coriander
    • 1/2 tsp black pepper
    • 1 1/2 tsp salt
    • 1/2 cup plain breadcrumbs

    • 1/2 cup fresh herbs (we use mint, dill, cilantro, and parsley)
    • juice of 1/2 a lemon
    • zest of 1/2 a lemon
    • 2 Tbsp water
    • 1/4 tsp garlic
    • 1/2 cup plain Greek yogurt
    • 1/2 Tbsp honey
    • 2 Tbsp tahini
    • 1/4 tsp salt
    • pinch of black pepper

    • 4 cups cooked grain of choice (we use quinoa)
    • 1 cucumber, sliced
    • 1 cup cherry tomatoes, halved
    • 1, 6 oz container feta cheese
    • 1 Tbsp tallow or cooking oil

    Directions

      1. Start cooking your grain for the bowl while you prepare the meatballs.

      2. Set the oven to 350° F.

      3. In a bowl, combine all meatball ingredients except for the egg and ground beef. Once mixed, add in the egg and ground beef and mix by hand until just combined.

      4. Form the mixture into tightly packed meatballs – approx. 2 Tbsp each. 

      5. Heat a skillet over medium-high heat. Once the pan is hot, coat with cooking oil or tallow. Brown the meatballs on each side and transfer them to a baking dish (if using a cast iron pan, you can put the pan directly in the oven).

      6. Bake meatballs until they reach 165° F -  approx.15-20 minutes.

      1. To a blender or food processor, add the herbs, lemon juice, zest, water, garlic, and yogurt, and blend until pureed, scraping down the sides to be sure all the herbs are incorporated.

      2. In a bowl, place the remaining ingredients, and slowly whisk in the herb mixture until smooth.

      1. Place your prepared grain as the base and top with meatballs, cherry tomatoes, sliced cucumbers, feta cheese, and herb tahini yogurt dressing. Garnish with fresh herbs and lemon zest.Â
