Pineapple Beef Satay with Peanut Sauce

This innovative twist on using stew meat transforms it into a flavor-packed satay that's sure to impress. If your family is anything like ours, this dish will quickly become a new favorite. It earnined a perfect 10/10 from everyone the first time we made it. It can easily be doubled to feed a bigger crowd.
Ingredients
For the Beef Satay:

1 pound Grand View Beef Grass Fed Stew Meat
- 1/2 cup fresh pineapple blended (~ 1 cup of pineapple chunks)
- 1/4 cup lime juice
- 2 Tbsp soy sauce (use tamari for gluten free)
- 2 Tbsp honey
- 2 tsp fresh ginger, grated
- 2 tsp garlic, minced
- 2 Tbsp olive oil
- 2 tsp kosher salt
- 1/4 tsp black pepper
- Skewers
For the Peanut Sauce:
- 1/2 cup creamy peanut butter
- 2 Tbsp lime juice
- 1 Tbsp rice vinegar or apple cider vinegar
- 2 tsp sesame oil
- 1 Tbsp soy sauce (use tamari for gluten free)
- 1 Tbsp honey
- 1/4 cup water
- 1 tsp fresh ginger, grated
- 1/4 tsp red pepper flakes (add more if you want spicy)
- 1 tsp garlic, minced
- 1/4 tsp kosher salt
- pinch of black pepper
For the Cilantro Rice:
- 4 cups cooked white rice
- 1/2 cup chopped cilantro or mint
- 1/2 tsp kosher salt
- Optional garnishes: cucumber, herbs, crushed peanuts
Directions
For the Satay:
Blend fresh pineapple chunks in a blender until liquid. Combine the blended pineapple with the remaining marinade ingredients. In a container or plastic bag, marinate the stew meat for 1 hour (no more than 1.5 hours - the enzyme in the pineapple will break the meat down too much).
While the meat is marinating, prepare the peanut sauce and cilantro rice and soak the wooden skewers in water to prevent them from burning.
Once the meat has marinated, transfer it onto the skewers and reserve the marinade.
In a skillet on medium-high heat or on a grill, cook the satay, basting it with the marinade. Allow the marinade to caramelize on each side of the meat as it cooks. This will take about 7-10 minutes and the meat will be well done. (see note below).
For the Peanut Sauce:
While the meat is marinating, prepare the peanut sauce. Combine all ingredients in a bowl and whisk together to emulsify.
To Serve:
Fold the cilantro and salt into the rice.
Serve the satay and peanut sauce over the cilantro rice. Garnish with fresh herbs, crushed peanuts, and slices of cucumber.
Recipe Note
Tenderized meat needs to be fully cooked for tenderness and food safety. The beef will be chewy if cooked to medium or less.
